Mix the Dough
In a large bowl, combine warm water, brown sugar, and yeast. Let it sit for about 5 minutes until frothy. Gradually mix in the flour and salt until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover, and let it rise for about 1 hour until doubled in size.

Shape the Pretzels
Preheat your oven to 450°F (232°C). Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a rope and shape it into a pretzel.

In a large pot, bring 10 cups of water and the baking soda to a boil. Carefully drop each pretzel into the boiling water for about 30 seconds. Remove and place on a baking sheet lined with parchment paper.
