Prepare the Chicken
Season the chicken breasts with Creole seasoning, salt, and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the chicken and cook for about 6-7 minutes on each side or until the chicken is cooked through and has a nice blackened crust. Remove from heat and let it rest.

Roast the Vegetables
Preheat the oven to 400°F (200°C). Toss the assorted vegetables in a bowl with the remaining olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes or until tender and slightly charred.

Cook the Linguini
While the vegetables are roasting, cook the linguini according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.

Prepare the Cream Sauce
In the same skillet used for the chicken, add minced garlic and sauté for 1 minute. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and smooth. Adjust seasoning as needed.

Combine and Serve
Slice the blackened chicken. In a large bowl, combine the cooked linguini, roasted vegetables, and cream sauce. Toss everything together until well combined. Top with sliced chicken and additional Parmesan cheese if desired. Serve hot.
