Marinate the Pork
In a bowl, combine garlic, orange juice, lime juice, oregano, cumin, salt, and black pepper. Place the pork shoulder into a resealable bag, pour the marinade over it, seal, and refrigerate for at least 4 hours or overnight for best results.

Cook the Pork
Preheat your oven to 300°F (150°C). Remove the pork from the marinade and place it in a baking dish. Cover with foil and roast for about 3 hours, or until the pork is tender and pulls apart easily. Let it rest before shredding.

Assemble the Sandwich
Slice the ciabatta rolls in half. Spread a layer of chipotle aioli on one side. Add shredded pork, ham, slices of chorizo, Swiss cheese, and sweet pickles.

Serve
Remove from heat, slice in half, and serve warm.
