Prepare the Honey Mustard Glaze
In a small bowl, mix together honey, Dijon mustard, minced garlic, lemon juice, salt, and black pepper. Set aside.

Preheat the Oven
Preheat your oven to 375°F (190°C).

Sear the Chicken
Heat olive oil in a large oven-safe skillet over medium-high heat. Season the chicken breasts with salt and black pepper, then place them skin-side down in the skillet. Sear for about 5-7 minutes until the skin is golden brown.

Add the Glaze
Flip the chicken breasts over and brush the honey mustard glaze generously over the top.

Roast in the Oven
Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

Rest and Serve
Remove the skillet from the oven and let the chicken rest for 5 minutes before serving. Garnish with chopped fresh rosemary.
