    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Wash the russet potatoes thoroughly and pierce them several times with a fork. Rub them with olive oil and sprinkle with salt.

    Bake the Potatoes

    Place the prepared potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork.

    Cool and Slice

    Once the potatoes are done, allow them to cool for a few minutes. Cut each potato in half lengthwise and scoop out some of the flesh, leaving about 1/4 inch of potato on the skin.

    Add Cheese and Bacon

    Preheat the oven to broil. Place the potato skins on a baking sheet. Fill each skin with white cheddar cheese and chopped bacon.

    Broil

    Broil the potato skins for 3-5 minutes or until the cheese is melted and bubbly.

    Serve

    Remove from the oven and top with sour cream and sliced scallions. Serve warm.
