Caramelize the Onions
In a large skillet, heat olive oil over medium heat. Add sliced onions and a pinch of salt, cooking slowly until they are golden brown and caramelized, about 15-20 minutes. Stir occasionally to prevent burning.

Prepare the Beef Jus
In a saucepan, heat the beef broth over medium heat. Season with salt and black pepper to taste. Keep warm.

Assemble the Sandwiches
Preheat your oven to 350°F (175°C). Slice the French rolls in half and place them on a baking sheet. Layer each roll with shaved roast beef, caramelized onions, and slices of white cheddar cheese.

Melt the Cheese
Place the assembled rolls in the oven for about 5-7 minutes, or until the cheese is melted and the bread is slightly toasted.

Serve
Spread aioli on the inside of the top half of the rolls. Close the sandwiches, slice in half if desired, and serve immediately with warm beef jus for dipping.
