For the Jumbo Cheese Filled Ravioli

Method

Instructions

  1. 1

    Make the Dough

In a large mixing bowl, combine the flour and salt. Create a well in the center and add the eggs. Gradually mix the flour into the eggs until a dough forms. Knead the dough on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

  2. 2

    Prepare the Filling

In a separate bowl, mix the ricotta, mozzarella, Parmesan, black pepper, and nutmeg until well combined.

  3. 3

    Roll Out the Dough

After resting, divide the dough into four equal pieces. Roll out each piece into thin sheets using a pasta machine or a rolling pin. Aim for about 1/16-inch thickness.

  4. 4

    Form the Ravioli

Place a tablespoon of filling spaced about 2 inches apart on one sheet of dough. Moisten the edges with water. Place another sheet of dough on top and press down to seal, ensuring no air pockets remain. Cut out the ravioli using a pasta cutter or knife.

  5. 5

    Cook the Ravioli

Bring a large pot of salted water to a boil. Add the ravioli and cook for 4-5 minutes or until they float to the surface. Remove with a slotted spoon.

  6. 6

    Serve with Sauce

In a saucepan, heat the marinara sauce. Serve the cooked ravioli topped with marinara sauce and a drizzle of olive oil. Enjoy!
