1. Prepare the Clams
Preheat your oven to 375°F (190°C). Rinse the clams under cold water to remove any sand or debris. Place them in a steamer over boiling water for about 5 minutes until they just open. Discard any that do not open.
2. Cook the Bacon
In a skillet, cook the bacon over medium heat until crispy. Remove and drain on paper towels. Once cooled, crumble the bacon into small pieces.
3. Make the Filling
In a mixing bowl, combine the bread crumbs, crumbled bacon, garlic, Parmesan cheese, bell pepper, parsley, olive oil, lemon juice, salt, and black pepper. Mix until well combined.
4. Stuff the Clams
Take each clam shell and spoon the filling mixture on top of the clam meat. Place the stuffed clams on a baking sheet.
5. Bake the Clams
Bake the stuffed clams in the preheated oven for about 15-20 minutes, until the topping is golden brown and crispy.
6. Serve
Remove from the oven and let cool for a few minutes. Serve hot as an appetizer.
