    Cook the Bacon

    In a large pot over medium heat, cook the diced bacon until crispy. Remove and set aside, leaving the bacon fat in the pot.

    Sauté Vegetables

    In the same pot, add butter and let it melt. Add onions and celery, sautéing until they are soft. Add the diced potatoes and continue to sauté for another 5 minutes.

    Add Flour

    Sprinkle the flour over the vegetable mixture and stir well to combine. Cook for about 2 minutes.

    Add Liquids

    Gradually add the milk and heavy cream, stirring constantly to avoid lumps. Bring the mixture to a simmer.

    Add Clams and Seasonings

    Add in the chopped clams, salt, black pepper, thyme, and bay leaves. Stir well and let simmer for 15-20 minutes until the potatoes are tender.

    Finish the Soup

    Remove bay leaves, adjust seasoning if necessary, and stir in the reserved bacon. Garnish with chopped parsley before serving.
