Preparation

1. Chop the Vegetables

Dice the carrots, celery, and onion into small pieces. Mince the garlic and chop the potatoes into cubes. Wash and roughly chop the spinach.

Stir in the chopped spinach and optional chickpeas if using. Cook for an additional 5 minutes until the spinach is wilted.

7. Serve
