1. Prepare the Grapes

Wash and destem the Cabernet Sauvignon, Merlot, and Syrah grapes thoroughly. Crush the grapes to release their juice, using a grape crusher or your hands in a sanitized bowl.

2. Combine Ingredients

In a large fermentation vessel, combine the crushed grapes with sugar and water. Stir well to dissolve the sugar completely.

3. Add Yeast

Sprinkle the contents of the wine yeast packet evenly over the surface of the grape mixture. Allow it to sit for about 15 minutes to activate before stirring it in gently.

4. Primary Fermentation

Cover the fermentation vessel with a clean cloth or airlock. Let it ferment in a cool, dark place for about 1-2 weeks, stirring daily. Monitor the fermentation activity; it should bubble and produce foam.

5. Secondary Fermentation

After the primary fermentation slows down, siphon the liquid into a clean carboy, leaving the sediment behind. Allow it to ferment for another 2-4 weeks.

Aging

6. Add Oak Chips

Once secondary fermentation is complete, add the oak chips and sulfites to the wine. Stir gently to mix.

7. Age the Wine

Seal the carboy with an airlock and let the wine age for 3-6 months in a cool, dark place. Taste periodically to check flavor development.

Bottling

8. Bottling the Wine

Once the wine has aged to your satisfaction, siphon it into clean, sanitized bottles, leaving some space at the top. Cork the bottles securely.

9. Label and Store

Label the bottles with the date and type of wine. Store them in a cool, dark place for additional aging or serve immediately.
