Method

Preparation

  1. 1

    Cook Linguine

Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain and set aside.

  2. 2

    Prepare Vegetables

While the pasta is cooking, chop the zucchini into half-moons and halve the cherry tomatoes. Mince the garlic and roughly chop the fresh basil.

Cooking

  1. 3

    Sauté Vegetables

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.

  2. 4

    Add Zucchini

Add the chopped zucchini to the skillet and sauté for about 3-4 minutes until it begins to soften.

  3. 5

    Add Tomatoes and Wine

Add the cherry tomatoes and white wine to the skillet. Season with salt and black pepper. Cook for an additional 5-7 minutes, stirring occasionally, until the tomatoes are softened and the sauce has slightly thickened.

  4. 6

    Combine with Pasta

Add the drained linguine to the skillet, tossing to coat the pasta with the vegetable and wine mixture. Stir in the chopped basil.

Serving

  1. 7

    Finish with Parmesan

Remove from heat and sprinkle with grated Parmesan cheese. Toss again to combine. Serve immediately with extra Parmesan on the side.
