Cooking Pasta

    Boil the Pasta

    In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

Preparing the Shrimp Scampi

    Sauté Garlic and Tomatoes

    In a large skillet over medium heat, melt the butter and olive oil together. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the halved cherry tomatoes and cook for another 2-3 minutes, until they start to soften.

    Cook the Shrimp

    Add the shrimp to the skillet and season with red pepper flakes, salt, and black pepper. Cook for about 3-4 minutes, stirring occasionally, until the shrimp turn pink and are cooked through.

    Combine with Linguine

    Add the cooked linguine to the skillet, along with the reserved pasta water, chopped scallions, and lemon juice. Toss everything together until well combined and heated through.

Serving

    Garnish and Serve

    Remove from heat, garnish with freshly chopped parsley, and serve immediately.
