Marinated Chicken

Method

Marinating Chicken

  1. 1

    Prepare the Marinade

In a bowl, whisk together olive oil, lemon juice, minced garlic, salt, black pepper, and dried oregano.

  2. 2

    Marinate the Chicken

Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it's evenly coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Grilling Chicken

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 450°F).

  2. 4

    Grill the Chicken

Remove the chicken from the marinade and place it on the preheated grill. Grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from the grill and let rest for 5 minutes.

  3. 5

    Slice the Chicken

Once rested, slice the grilled chicken into strips.

Assembling the Salad

  1. 6

    Prepare the Salad Base

In a large salad bowl, add the chopped romaine lettuce and halved cherry tomatoes.

  2. 7

    Add Chicken and Almonds

Top the salad with the sliced grilled chicken and slivered almonds.

  3. 8

    Garnish and Serve

Serve the salad with lemon wedges on the side for squeezing over the top.
