Cook Quinoa
Rinse 2 cups of quinoa under cold water. In a pot, combine quinoa with 4 cups of water. Bring to a boil, reduce heat, cover, and simmer for 15 minutes until water is absorbed.
Prepare Salad
In a large bowl, combine 4 cups of mixed greens with grilled chicken pieces and cooked quinoa.
Dress Salad
Drizzle 4 tablespoons of olive oil and 2 tablespoons of balsamic vinegar over the salad. Toss gently to combine.
