Make the Sopapillas
In a large bowl, mix together the flour, baking powder, salt, and sugar. Add the lard (or shortening) and mix until the mixture resembles coarse crumbs. Gradually add warm water until a soft dough forms.

Knead and Roll
On a floured surface, knead the dough for about 2 minutes. Roll out to 1/4-inch thickness and cut into squares or triangles.

Fry the Sopapillas
Heat the vegetable oil in a deep frying pan over medium-high heat. Fry the dough pieces in batches until they puff up and are golden brown, about 1-2 minutes per side. Remove and drain on paper towels.

Assemble the Dish
Serve the warm sopapillas topped with a scoop of Mexican vanilla gelato, a dollop of whipped cream, and drizzle with hibiscus syrup.
