Beef Brisket Filling

Cook the Beef Brisket

In a large pot, add the beef brisket, chopped onion, minced garlic, cumin, chili powder, salt, black pepper, and beef broth. Cover and simmer on low heat for about 3 hours or until the beef is tender. Shred the beef and set aside.

Tamale Dough

Prepare the Tamale Dough

In a large bowl, mix masa harina, baking powder, and salt. In a separate bowl, cream the shortening until fluffy. Gradually add the masa harina mixture and beef broth, mixing until a soft dough forms.

Assemble Tamales

Fill and Wrap Tamales

Soak corn husks in warm water for 30 minutes. Take a corn husk, spread a portion of the dough, place shredded beef brisket in the center, and fold the sides over. Steam the tamales for about 1 hour.

Crispy Beef Taco

Prepare the Taco Filling

In a skillet, cook ground beef with taco seasoning until browned. Drain excess fat.

Fry the Tortillas

In a separate pan, heat oil. Fry corn tortillas until crispy, then fill with taco mixture, lettuce, tomatoes, and cheese.

Cheese Enchiladas

Assemble Enchiladas

Soften corn tortillas in a pan, fill with cheese, roll up, and place in a baking dish. Pour beef gravy over the enchiladas and top with chopped onion. Bake at 350°F for 20 minutes.

Garnish with cilantro before serving.
