1. Prepare the Cheese

Slice the panela cheese into thick slabs, approximately 2 cm each.

2. Preheat the Wood Oven

Preheat your wood oven to a high temperature, around 450°F (232°C).

3. Sear the Cheese

Brush the cheese slabs with olive oil and season with salt and black pepper. Place the cheese directly on the oven's hot surface or on a grill pan and sear for about 3-4 minutes on each side, or until golden brown and slightly charred.

4. Prepare the Chiles

While the cheese is grilling, grill the chiles toreados until blistered and slightly charred, about 2-3 minutes per side.

5. Assemble the Dish

On a serving platter, place the seared panela cheese, grilled chiles, and drizzle with tomatillo salsa. Add escabeche and sliced avocado on the side.

6. Serve

Serve immediately while the cheese is warm and enjoy!
