    Roast the Pineapple

    Preheat your grill or oven to medium-high heat. Cut the pineapple into rings or wedges and place them on the grill or in the oven. Roast for about 5-7 minutes on each side until caramelized and slightly charred. Let cool and then chop into small pieces.

    Muddle the Mint

    In a sturdy glass or cocktail shaker, add the fresh mint leaves and muddle them gently to release their oils. Be careful not to tear them apart too much.

    Mix the Ingredients

    Add the roasted pineapple chunks, fresh lime juice, white rum, and simple syrup into the glass or shaker with the muddled mint. Stir or shake gently to combine.

    Assemble the Mojito

    Fill a tall glass with ice, then pour the mixture over the ice. Top off with Topo Chico sparkling water for a refreshing finish.
