Cooking Instructions

  1. 1

    Marinate the Pork

In a bowl, combine achiote paste, orange juice, lime juice, minced garlic, and salt. Mix well to create a marinade. Add the pork shoulder to the marinade, ensuring it's well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

  2. 2

    Cook the Pork

Preheat your oven to 300°F (150°C). Place the marinated pork in a baking dish, cover with aluminum foil, and bake for about 4-5 hours, or until the pork is tender and easily shredded. Shred the pork using two forks.

  3. 3

    Prepare Refried Beans

In a skillet, heat olive oil over medium heat. Add canned black beans and cook, mashing them slightly with a fork or potato masher until they reach a creamy consistency. Season with salt to taste.

  4. 4

    Pickle the Red Onions

In a small saucepan, combine vinegar and sliced red onions. Heat over low heat until warmed through, then remove from heat and let cool. The onions will soften and pickle as they cool.

  5. 5

    Assemble the Tostadas

Spread a layer of refried black beans on each tostada shell. Top with shredded pork, pickled red onions, and chopped cilantro. Serve immediately.
