    Make the Pasta Dough

    In a large bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into it. Using a fork, gradually mix the flour into the eggs until a dough begins to form. Knead the dough on a floured surface for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Add the spinach and sauté until wilted, about 2-3 minutes. Remove from heat and let it cool slightly. In a mixing bowl, combine the sautéed spinach, ricotta cheese, Parmesan cheese, salt, and black pepper. Mix until well combined.

    Roll Out the Dough

    After resting, divide the dough into four equal portions. Roll out each portion on a floured surface into thin sheets, about 1/16 inch thick.

    Form the Ravioli

    Place teaspoons of the spinach and cheese filling about 1 inch apart on one sheet of pasta. Moisten the edges of the pasta with water and fold the other sheet over the top. Press down around the filling to seal. Cut into squares using a knife or a ravioli cutter.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Add the ravioli and cook for about 3-4 minutes, or until they float to the top. Remove with a slotted spoon and drain.
