Spinach & Cheese Ravioli Recipe

Prepare the Ravioli Dough

    Mix the Dough

    In a large bowl, combine the flour and salt. Make a well in the center and add the eggs and olive oil. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

Make the Filling

    Sauté Spinach

    In a pan, heat a little olive oil and sauté the garlic until fragrant. Add the spinach and cook until wilted. Remove from heat and let cool.

    Mix the Filling

    In a bowl, combine the ricotta, parmesan, wilted spinach, nutmeg, salt, and pepper. Mix well.

Assemble the Ravioli

    Roll Out the Dough

    Roll out the dough into thin sheets using a pasta machine or rolling pin.

    Form the Ravioli

    Place small spoonfuls of the filling on one sheet of dough, leaving space between each. Wet the edges with water, and place another sheet of dough on top. Press to seal and cut out individual ravioli.

Prepare the Marinara Sauce

    Cook the Sauce

    In a saucepan, heat olive oil over medium heat. Sauté garlic until golden, then add crushed tomatoes, oregano, salt, and sugar. Simmer for 20 minutes, stirring occasionally. Add fresh basil before serving.

Cook and Serve

    Boil the Ravioli

    Bring a large pot of salted water to a boil. Cook the ravioli in batches for about 3-4 minutes until they float to the surface. Drain and serve with marinara sauce.
