Prepare the crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup of granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes and then set aside to cool.

Make the filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add in the remaining 3/4 cup of granulated sugar, sour cream, vanilla extract, and salt. Mix until fully combined. Add the eggs one at a time, mixing on low speed after each addition until just blended.

Bake the cheesecake
Pour the cream cheese mixture over the cooled graham cracker crust. Bake in the preheated oven for 55-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and let the cheesecake cool inside with the door slightly ajar for 1 hour.

Chill and serve
After the cheesecake has cooled, refrigerate for at least 4 hours, preferably overnight. Before serving, prepare a strawberry purée by blending fresh strawberries with a little sugar to taste. Serve slices of cheesecake garnished with the strawberry purée.
