Cake Preparation

    Preheat Oven

    Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

    Mix Dry Ingredients

    In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.

    Combine Wet Ingredients

    Add eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.

    Add Boiling Water

    Carefully stir in boiling water until the batter is smooth (the batter will be thin).

    Bake

    Pour the batter evenly into the prepared pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

    Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Mousse Preparation

    Melt Chocolate

    In a heatproof bowl, melt the bittersweet chocolate over a double boiler or in the microwave. Let cool slightly.

    Prepare Gelatin

    In a small bowl, sprinkle gelatin over cold water and let it sit for 5 minutes to bloom.

    Whip Cream

    In a separate bowl, whip heavy cream and powdered sugar until soft peaks form. Stir in vanilla extract.

    Dissolve bloomed gelatin over low heat and then mix into melted chocolate. Fold in whipped cream until combined.

Assembly

    Layer Cake

    Place one layer of the cooled cake on a serving plate and spread half of the mousse on top.

    Add the second layer of cake and spread the remaining mousse over the top and sides.

    Refrigerate the cake for at least 4 hours or until the mousse is set.

    In a small saucepan, heat heavy cream until just simmering. Remove from heat and stir in bittersweet chocolate until smooth.
