    Prepare the Fries

    Cook the thick-cut fries according to package instructions until golden and crispy. Set aside.

    Caramelize the Onions

    In a skillet, heat a little oil over medium heat. Add sliced onions and cook until they are soft and caramelized, about 15 minutes. Set aside.

    Make the Sausage Gravy

    In the same skillet, add the Redneck sausage and cook until browned. Sprinkle the flour over the sausage and stir to combine. Gradually add the milk, whisking to prevent lumps. Cook until the gravy thickens, approximately 5-7 minutes. Season with salt and black pepper to taste.

    In a separate pan, heat oil over medium heat. Crack the eggs into the pan and fry to your desired doneness (sunny side up or over easy). Season with salt and pepper.
