    Prepare the Biscuit Dough

    Preheat the oven to 450°F (232°C). In a large bowl, mix together flour, baking powder, baking soda, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in buttermilk until just combined.

    Shape and Bake

    Turn dough onto a floured surface and knead gently. Roll to about 1-inch thick and cut into rounds. Place on a baking sheet and bake for 12-15 minutes until golden brown.

Gravy

    Cook the Sausage

    In a skillet over medium heat, cook the sausage until browned. Remove sausage and set aside, leaving the drippings in the pan.

    Make the Gravy

    Add flour to the drippings and whisk until golden brown. Gradually add milk, whisking continuously until thickened. Return sausage to the skillet and season with salt, black pepper, and red pepper flakes.

Potatoes O'Brien

    Cook the Potatoes

    In a large skillet, heat olive oil over medium heat. Add diced potatoes and cook until tender, about 10-15 minutes.

    Add Vegetables

    Add bell pepper and onion, season with salt and pepper, and continue cooking until vegetables are soft and potatoes are crispy, about another 5-10 minutes.
