    Prepare the Hashbrowns

    In a large skillet, heat 1 tablespoon of olive oil or butter over medium heat. Add the hashbrowns and cook until golden brown and crispy, about 5-7 minutes per side. Season with salt and pepper. Remove from the skillet and set aside.

    Cook the Sausage

    In the same skillet, add the remaining tablespoon of olive oil or butter. Add the diced onion and jalapeno, sautéing until the onion is translucent, about 3-4 minutes. Add the sausage and cook until browned and cooked through, about 5-7 minutes.

    Scramble the Eggs

    In a bowl, whisk together the eggs, salt, and pepper. Pour the egg mixture into the skillet with the sausage and vegetables. Cook gently, stirring occasionally, until the eggs are softly scrambled and just set, about 3-4 minutes.

    Add Cheese and Serve

    Sprinkle the shredded pepperjack cheese over the scrambled eggs and allow it to melt. Serve the scramble hot with the crispy hashbrowns and your choice of toast on the side.
