Prepare the Ingredients
Diced the ham, red bell pepper, onion, tomato, and sliced mushrooms.

Cook the Vegetables
In a large skillet, melt 1 tablespoon of butter over medium heat. Add the onions and red bell pepper, and sauté for about 3 minutes until softened. Then add the mushrooms and cook for an additional 2 minutes. Stir in the ham and tomato, cooking for another 2 minutes. Remove the mixture from the skillet and set aside.

Cook the Omelette
In the same skillet, melt the remaining tablespoon of butter. Pour in the egg mixture and cook until the edges begin to set. Use a spatula to gently lift the edges while tilting the pan to let uncooked eggs flow to the edges.

Add Filling
Once the omelette is mostly set but still slightly runny on top, sprinkle the sautéed vegetable and ham mixture over half of the omelette, then top with your choice of cheese.

Fold and Serve
Carefully fold the omelette in half over the filling. Cook for an additional minute until the cheese is melted. Slide the omelette onto a plate, cut in half if desired, and serve hot.
