    Prepare the Breakfast Potatoes

    Boil, then pan-fry the breakfast potatoes until golden brown. Season with salt and black pepper. Set aside.

    Make the Hollandaise Sauce

    In a double boiler, melt the butter. In a separate bowl, whisk egg yolks and lemon juice until thick. Gradually whisk in melted butter until smooth. Season with cayenne, salt, and black pepper.

    Poach the Eggs

    Bring a pot of water to a simmer. Crack the eggs into individual bowls, then gently slide them into the simmering water. Poach for about 3-4 minutes until whites are set but yolks remain runny.

    Assemble the Dish

    On each biscuit half, layer ham, topped with a poached egg. Drizzle with hollandaise sauce. Serve with breakfast potatoes on the side.
