    Rinse and Prepare Wild Rice

    Rinse the wild rice under cold water in a fine-mesh sieve. This helps to remove any debris and excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed wild rice, water or vegetable broth, and salt. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for about 45-50 minutes, or until the rice is tender and has split open. Remove from heat and let it sit covered for 10 minutes.

    Sauté the Vegetables

    While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 5 minutes, or until softened. Stir in the minced garlic and sliced mushrooms, cooking for another 5-7 minutes until the mushrooms are tender.

    Combine and Serve

    Once the rice is ready, fluff it with a fork and add it to the sautéed vegetables in the skillet. Toss to combine and heat through. Finish with fresh parsley and serve warm.
