Soup Preparation

    Prepare the Onions

    Slice the yellow onions thinly. In a large pot, heat the butter and olive oil over medium heat until melted.

    Cook the Onions

    Add the sliced onions to the pot, stirring to coat. Cook for about 30-40 minutes, stirring occasionally until the onions are caramelized and golden brown.

    Deglaze the Pot

    Add the dry white wine to the pot, scraping the bottom to release any stuck bits. Let it simmer for about 5 minutes.

    Add Broth and Seasonings

    Pour in the beef broth, add thyme, bay leaves, salt, and black pepper. Bring to a boil, then reduce heat and let simmer for 30 minutes.

    Prepare the Cheese

    While the soup is simmering, prepare cheese to top the soup. Grate about 2 cups of Gruyère cheese.

    Serve the Soup

    Remove bay leaves from the soup. Ladle the soup into oven-safe bowls, top with grated cheese, and place under the broiler for 2-3 minutes until cheese is bubbly and golden.
