    Prepare the Corned Beef

    Slow cook the thick cut corned beef in a crockpot on low for 6-8 hours until tender. Slice thinly against the grain.

    Assemble the Sandwich

    Spread 1 tablespoon of 1000 Island dressing on one side of each slice of marble rye bread.

    Layer Ingredients

    On two slices, layer the sliced corned beef, Swiss cheese, and sauerkraut, then top with the remaining slices of bread, dressing side down.

    Grill the Sandwich

    Heat a skillet over medium heat and add 1 tablespoon of butter. Once melted, place the sandwiches in the skillet. Grill until golden brown, about 3-4 minutes per side, adding more butter as needed.

    Serve

    Remove from the skillet, slice in half, and serve hot with extra 1000 Island dressing on the side.
