Burger Preparation

    Prepare the Cajun Mayo

    In a bowl, mix together mayonnaise and Cajun seasoning until well combined. Set aside.

    Prepare the Jalapeños

    Slice the jalapeños and dip them in the flour, then in the beaten egg, and finally coat them with cornmeal.

    Fry the Jalapeños

    Heat vegetable oil in a frying pan over medium-high heat. Fry the coated jalapeños until golden brown and crispy. Drain on paper towels.

    Cook the Burger Patties

    Form the ground beef into 4 patties. Season with salt and pepper. Grill or pan-sear the patties for about 4-5 minutes on each side or until cooked to your desired doneness.

    Melt the Cheese

    Place a slice of pepper jack cheese on each patty during the last minute of cooking to allow it to melt.

    Assemble the Burger

    Toast the hamburger buns, then layer the bottom bun with the cooked patty topped with melted cheese, fried jalapeños, and a generous dollop of Cajun mayo. Cover with the top bun and serve.
