Prepare the Cajun Mayo
In a small bowl, mix together mayonnaise and hot sauce. Set aside.

Prepare the Shrimp
In a bowl, combine the shrimp with Cajun seasoning. In another bowl, whisk together flour, cornmeal, and additional Cajun seasoning.

Batter the Shrimp
Dip the shrimp into the buttermilk, then coat with the flour and cornmeal mixture.

Fry the Shrimp
In a large skillet, heat vegetable oil over medium-high heat. Fry the shrimp in batches until golden brown and cooked through, about 2-3 minutes per side. Remove and drain on paper towels.

Assemble the Po'boys
Slice the hoagie rolls open and spread a generous amount of Cajun mayo inside. Layer with fried shrimp, shredded lettuce, tomato slices, and onion. Serve immediately.
