Prepare Filling
In a large bowl, mix the ground pork, chopped cabbage, green onions, minced garlic, minced ginger, soy sauce, and sesame oil until well combined.

Assemble Potstickers
Place a small spoonful of the filling in the center of each potsticker wrapper. Moisten the edges of the wrapper with water, fold in half, and pinch to seal.

Cook Potstickers
In a large skillet, heat vegetable oil over medium-high heat. Place potstickers in a single layer and cook until the bottoms are golden brown, about 3-4 minutes.

Steam Potstickers
Add a few tablespoons of water to the skillet and cover immediately. Allow to steam for 5-6 minutes, until the water has evaporated.

Serve
Remove potstickers from the skillet, garnish with additional green onions, and serve with Thai chili sauce for dipping.
