    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Wash and scrub the russet potatoes thoroughly. Prick them with a fork several times and rub them with olive oil, salt, and black pepper. Place them directly on the oven rack and bake for 45-60 minutes until tender.

    Cook the Bacon

    While the potatoes are baking, cook the bacon in a skillet over medium heat until crispy. Remove from the skillet and place on paper towels to drain excess grease. Once cooled, crumble the bacon into small pieces.

    Prepare the Potato Skins

    Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Cut each potato in half lengthwise and scoop out a small amount of the flesh, leaving about 1/4 inch of potato on the skin.

    Assemble the Skins

    Brush the inside of each potato skin with olive oil and season with salt and pepper. Sprinkle the crumbled bacon and shredded cheddar cheese evenly over the skins.

    Bake Again

    Return the loaded potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

    Garnish and Serve

    Remove the potato skins from the oven and top with chopped scallions. Serve hot with a side of sour cream.
