Prepare the Dough
In a large mixing bowl, dissolve the sugar and yeast in warm water. Let it sit for about 5-10 minutes until frothy. Add the flour and salt, then mix until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth.

Let the Dough Rise
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm area for about 1 hour or until it doubles in size.

Shape the Pretzels
Preheat the oven to 450°F (232°C). Once risen, punch down the dough and divide it into 4 equal pieces. Roll each piece into a long rope and then shape it into a pretzel.

Prepare the Baking Soda Bath
In a large pot, bring 10 cups of water and baking soda to a boil. Carefully drop each pretzel into the boiling water for about 30 seconds. Remove them and place them on a baking sheet lined with parchment paper.

Serve
Remove from the oven, let cool slightly, and serve warm with beer cheese.
