    Peel the onions and slice them into 1/2-inch thick rings. Separate the rings and set them aside.

    Make the Batter

    In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and cayenne pepper. Whisk together until well combined. Gradually add the cold beer or sparkling water to the dry ingredients, stirring until the batter is smooth and has no lumps.

    Heat the Oil

    In a deep fryer or a large pot, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

    Batter the Onion Rings

    Dip each onion ring into the batter, allowing any excess to drip off before carefully placing them into the hot oil.
