    Sauté the Onions

    In a skillet, heat the olive oil over medium heat. Add the sliced onions and sauté until they are caramelized and golden brown, about 10-15 minutes. Season with salt and pepper. Remove from heat and set aside.

    Prepare the Au Jus

    In a saucepan, bring the beef broth to a simmer over medium heat. This will be served alongside the French dip for dipping.

    Assemble the Sandwiches

    Preheat the oven to 350°F (175°C). Place the hoagie rolls on a baking sheet. Layer the thinly sliced prime rib on the bottom half of each roll, top with sautéed onions, and finally add the Swiss cheese slices.

    Melt the Cheese

    Place the assembled sandwiches in the oven for about 5-7 minutes or until the cheese is melted and bubbly. Remove from the oven.

    Cut each sandwich in half and serve hot with the au jus on the side for dipping.
