Prepare the Fries
Peel the potatoes and cut them into thick strips. Rinse under cold water, then soak in cold water for about 30 minutes to remove excess starch.

Make the Batter
In a mixing bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until a smooth batter forms.

Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain the soaked potatoes and pat them dry. Fry the potato strips in batches for about 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels. Season with salt to taste.

Fry the Fish
Dip each fish fillet into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil and fry for 5-6 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Serve
Serve the fish and chips hot, garnished with coleslaw and accompanied by tartar sauce.
