    Preheat the Oven

    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients

    In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt.

    Combine Wet Ingredients

    In another bowl, mix together the vegetable oil, eggs, and vanilla extract until well combined.

    Combine Mixtures

    Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

    Add Carrots and Nuts

    Fold in the grated carrots and chopped walnuts or pecans until evenly distributed.

    Bake the Cake

    Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

    Cool the Cake

    Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then turn them out onto wire racks to cool completely.

    Prepare Cream Cheese Icing

    In a mixing bowl, beat together 8 oz cream cheese, 1/2 cup unsalted butter, 4 cups powdered sugar, and 1 tsp vanilla extract until creamy and smooth.

    Frost the Cake

    Once the cakes are completely cool, spread a layer of cream cheese icing on top of one cake layer, place the other layer on top, and frost the top and sides of the cake.

    Slice the cake to order and serve. Enjoy your famous carrot cake!
