Wine Production

Harvesting
Carefully harvest Merlot and Riesling grapes from the Okanagan Valley, ensuring to select ripe and healthy bunches.

Crushing
Crush the grapes to release their juices, separating the skins and seeds from the liquid.

Fermentation
In a sanitized fermentation vessel, combine the Merlot and Riesling juices. Add the yeast and sulfur dioxide to the mixture. Allow it to ferment at a controlled temperature of around 18-22°C for 2-3 weeks.

Pressing
After fermentation, press the mixture to separate the wine from the remaining solids.

Aging
Transfer the wine to oak barrels for aging. Allow it to mature for at least 6 months to develop its flavors.

Bottling
After aging, filter the wine and bottle it. Seal the bottles and label them appropriately.
