Prepare the Rhubarb Syrup
In a small saucepan, combine chopped rhubarb with equal parts water and sugar. Cook over medium heat until rhubarb breaks down and the mixture thickens. Strain and cool.

Mix the Cocktail
In a cocktail shaker, add pear brandy, botanist gin, grapefruit juice, rhubarb syrup, pink peppercorns, and citrus zest. Add ice, then shake vigorously for about 15 seconds.

Strain and Serve
Strain the cocktail into a chilled glass. Garnish with fresh thyme sprigs and a few pink peppercorns on top.
