Prepare the Patties
In a mixing bowl, season the ground beef with salt and black pepper. Divide the beef into two equal portions and form into patties.

Cook the Bacon
In a skillet over medium heat, cook the smoked bacon until crispy. Remove and set aside on paper towels to drain.

Cook the Patties
In the same skillet, add the beef patties. Cook for about 3-4 minutes on one side, then flip and place a slice of smoked gouda cheese on each patty. Cook for another 3-4 minutes until the cheese melts and the burgers are cooked to your desired doneness.

Assemble the Burgers
Spread smoky BBQ sauce on the bottom half of each burger bun. Place a cheesy beef patty on top, followed by two slices of crispy bacon and a slice of dill pickle. Top with the other half of the bun.

Serve
Serve the Smokey Smash Burgers immediately with your favorite side dishes.
