    Prepare the Cauliflower Puree

    In a large pot, bring salted water to a boil. Cut the cauliflower into florets and add to the boiling water. Cook until tender, about 10 minutes. Drain and transfer to a blender. Add 2 tablespoons of olive oil, salt and black pepper to taste, and blend until smooth. Set aside.

    Roast the Peppers

    Preheat the oven to 400°F (200°C). Cut the red and yellow bell peppers in half, remove seeds and membranes. Place them on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Roast in the oven for 25-30 minutes until tender and slightly charred. Remove from oven and let cool before slicing.

    Caramelize the Onion

    In a skillet over medium heat, add 1 tablespoon of olive oil. Thinly slice the onion and add to the skillet. Cook slowly, stirring occasionally, for about 15-20 minutes until caramelized and golden brown. Set aside.

    Roast the Mushrooms, Zucchini, and Yellow Squash

    On the same baking sheet, add the sliced mushrooms, zucchini, and yellow squash. Drizzle with the remaining tablespoon of olive oil, season with garlic powder, salt, and pepper. Toss to coat and roast in the oven for about 20-25 minutes, until tender and slightly browned.

    Assemble the Dish

    On a serving plate, spread a generous layer of cauliflower puree. Top with roasted peppers, caramelized onions, and the roasted mushroom, zucchini, and yellow squash mixture. Serve warm.
