Filling Preparation

    Cook the Pork and Shrimp

    In a skillet over medium heat, add the ground pork and cook until browned, about 5-7 minutes. Add the chopped shrimp, garlic, and ginger, and cook for an additional 3 minutes until shrimp are pink.

    Add Vegetables and Seasoning

    Stir in the julienned carrot, chopped green onion, soy sauce, fish sauce, salt, and black pepper. Cook for another 2-3 minutes until the vegetables are tender yet crisp. Remove from heat and let cool.

Rolling the Spring Rolls

    Prepare the Wrapper

    Lay a spring roll wrapper on a clean, flat surface with one corner facing you.

    Fill the Wrapper

    Spoon about 2 tablespoons of the filling mixture onto the center of the wrapper.

    Roll the Wrapper

    Fold the corner closest to you over the filling, then fold in the sides, and roll away from you tightly. Seal the end with a dab of water.

Frying

    Heat the Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

    Fry the Spring Rolls

    Carefully place the spring rolls in the hot oil, a few at a time, and fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

    Serve the spring rolls hot with sweet chili sauce for dipping.
