Preparing the Salmon

Marinate the Salmon
In a small bowl, whisk together the olive oil, lemon juice, minced garlic (you can chop it finely), salt, and black pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Make sure the fillets are well coated. Cover the dish with plastic wrap and let it marinate in the refrigerator for at least 30 minutes.

Preheat the Grill
Preheat your grill to medium-high heat (about 375°F to 450°F or 190°C to 230°C).

Grill the Salmon
Remove the salmon from the marinade, allowing excess marinade to drip off. Place the salmon fillets skin-side down on the grill. Grill for about 6-8 minutes on one side, then carefully flip and grill for another 4-6 minutes until the fish flakes easily with a fork and is cooked through.

Prep the Vegetables
Wash and trim the asparagus, slice the bell peppers and zucchini into strips, and halve the cherry tomatoes.

Toss with Oil and Seasoning
In a large bowl, combine the prepared vegetables. Drizzle with olive oil, and season with salt and black pepper to taste. Toss to coat evenly.

Plate the Dish
Once the salmon and vegetables are grilled, serve the salmon fillets on a plate alongside a generous portion of the grilled seasonal vegetables. Optionally, garnish with lemon wedges or fresh herbs if desired.
