Coleslaw

Method

Preparing the Catfish

  1. 1

    Marinate the Catfish

In a large bowl, pour the buttermilk over the catfish fillets. Cover and refrigerate for at least 30 minutes to marinate.

  2. 2

    Prepare the Breading

In a separate bowl, mix together cornmeal, flour, cayenne pepper, paprika, salt, and black pepper.

  3. 3

    Coat the Catfish

Remove the marinated catfish from the refrigerator. Dredge each fillet in the cornmeal mixture, ensuring they are fully coated.

Frying the Catfish

  1. 4

    Heat the Oil

In a deep frying pan or cast iron skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 5

    Fry the Catfish

Fry the coated catfish fillets in batches for about 4-5 minutes on each side, or until golden brown and crispy. Remove and place on paper towels to drain excess oil.

Preparing the Fries

  1. 6

    Cut the Potatoes

Wash and peel the potatoes. Cut them into thin fries.

  2. 7

    Fry the Fries

In a separate pot, heat vegetable oil over medium-high heat. Once hot, fry the potato pieces until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Sprinkle with salt.

Making the Coleslaw

  1. 8

    Prepare the Vegetables

Shred the cabbage and grate the carrot. In a large bowl, combine them.

  2. 9

    Mix the Dressing

In a small bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

  3. 10

    Combine

Pour the dressing over the cabbage and carrot mixture. Toss until well combined. Cover and refrigerate for at least 15 minutes before serving.

Serving

  1. 11

    Serve the Meal

On a plate, serve the crispy fried catfish alongside a generous portion of fries and coleslaw. Enjoy your delicious meal!
