Calamari Preparation

Clean and Slice the Calamari
Rinse the fresh calamari under cold water. Remove any skin and cut the tubes into rings about 1/2 inch thick.

Prepare the Coating Mixture
In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder until well combined.

Soak the Calamari
Place the sliced calamari into a separate bowl and pour the buttermilk over them. Let them soak for about 15 minutes.

Coat and Fry the Calamari
Remove the calamari from the buttermilk and let the excess drip off. Dredge them in the flour mixture, ensuring they are well coated. Fry in batches for about 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.
Marinara Sauce Preparation

Sauté Garlic
In a saucepan, heat the olive oil over medium heat. Add minced garlic cloves and sauté until fragrant, about 1-2 minutes.

Simmer the Sauce
Add the canned crushed tomatoes, dried oregano, salt, and black pepper to the saucepan. Stir to combine, then bring to a simmer. Reduce heat to low and let it cook for about 15-20 minutes, stirring occasionally.

Finish the Sauce
Taste the sauce and adjust seasoning if needed. If using, stir in fresh basil before serving.
