Preparation

    Prepare the Crawfish

    Rinse the crawfish thoroughly under cold running water to remove any debris. Set aside.

    Prepare the Vegetables

    Wash the red potatoes and cut them in half if they are larger than golf balls. Cut the corn into halves if desired.

    Prepare the Seasoning

    Mince the garlic cloves and set aside. Slice the lemons in half.

Cooking

    Boil the Water

    In a large pot, fill with water (about 4-5 gallons) and bring it to a rolling boil over high heat.

    Add Seasonings

    Once the water is boiling, add the Old Bay seasoning, salt, cayenne pepper, minced garlic, and the halved lemons to the pot.

    Cook the Potatoes

    Add the red potatoes to the boiling water and cook for about 15 minutes or until they are fork-tender.

    Add the Corn

    Add the corn on the cob to the pot and boil for an additional 5 minutes.

    Add the Crawfish

    Carefully add the rinsed crawfish to the pot, stirring gently. Cook for about 3-5 minutes until the crawfish turn bright red and are fully cooked.

    Optional Add-Ins

    If using, add the sliced Andouille sausage and mushrooms during the last 5 minutes of cooking for added flavor.

    Drain and Serve

    Turn off the heat and drain the contents of the pot into a large colander. Serve immediately on a newspaper-lined table or a large platter.
